Priya's vegan pastries

“I got this family recipe from my mother. She loves sharing recipes – just like me. By the way, I accidentally made this pie in Surinamese style, after 15 years I discovered that she had been adding a ‘Dutch curry’ to the minced chicken all that time. Now that I have also made it vegan, the recipe has changed a bit, but even more people can enjoy it. Quite symbolic for this day actually: that no one is excluded and everyone can taste everything. ”

Ingredients
15 slices of puff pastry
300 g minced chicken
2 tbsp sunflower oil
1.5 leeks
1 large onion
2 eggs
1 tbsp masala (Surinamese curry)
A chicken stock cube
A dash of salty soy sauce (Yellow Label Black Soy)

Sauce to go with it
4 tbsp tomato ketchup
1 Madame Jeannet

Freedom is for me
“Freedom is something very big for me. My ancestors come from India, after which they emigrated to Suriname. When Suriname became independent in 1975, people there had to choose: stay there or move to the Netherlands. My grandparents chose the latter and that is how my parents came to the Netherlands as teenagers. I was born and raised here and can go wherever I want. I have the right to vote, am independent, am allowed to drink alcohol: it took courage to achieve this freedom – and this modern life – for me. Having it so good and free is really not something I take for granted.

Eating is also a form of freedom for me. About three times a week I have guests at home: the table is full, my friends join me and that is how I celebrate life every day. At the table, everyone is free and equal: time and hierarchy do not exist for a while.”
