Indian Masala Sprout

My Indian Masala Sprout symbolizes the right to be an individual, and at the same time be one together. It consists of different, independent, strong flavors, with their own identity. But together they form a harmonious whole, like a symphony; just like people.

Ingredients

  • 1 cup whole moong bean sprouts (Indian whole moong bean)
    1 tsp olive oil
    1 small onion chopped
    1 small tomato, chopped
    1/4 inch ginger minced
    A pinch of aesofoetida
    1 tsp Indian spice mix (turmeric, coriander, cumin, chaat masala)
    1 tbsp coriander leaves, finely chopped
    1 lemon juice
    Salt to taste

Pour 1 tsp olive oil into a pan on the stove. Once it is hot, add the aesofoetida and fry the ginger and onions until soft. Now add the sprouts and the spices. Once soft, add the tomatoes and cook for 2 minutes. Turn off the heat and add the lemon juice and coriander leaves.
Serve this colorful freedom dish in small edible cups or over a lettuce leaf.
