DERUNY (Ukrainian potato pancake)

Deruny are traditional Ukrainian potato pancakes made from grated potatoes, onions and garlic. These savory pancakes are loved for their crispy exterior, soft interior and are served with sour cream.

"I can play, laugh and choose for myself"

Ingredients (for 6-8 persons)

  • 4 medium sized apples

  • 1 yellow onion

  • 1 egg

  • 3 tablespoons flour

  • 1 tablespoon sour cream

  • 1 teaspoon salt and pepper to taste

  • Cooking oil (sunflower oil)

  • Serving sauce:

  • 1 garlic clove, finely chopped

  • sour cream

Instructions:

Peel the potatoes and onion. Take a large bowl, grate the potatoes and onion (on the star grater) and mix the grated mixture alternately. Onion juice prevents the potatoes from browning. Add flour, egg and sour cream and mix everything well. Then add 1 teaspoon of salt and some black pepper, the batter should still be liquid enough so that you can easily scoop it. Heat a frying pan with 2-3 tablespoons of cooking oil on medium heat. Add 1 tablespoon of mixture at a time to the frying pan and fry on one side until golden brown, then turn to the other side and fry for the same amount of time. Repeat the same procedure for the rest of the batter.

For the serving sauce: mix the chopped garlic with the sour cream and salt to taste.
